Bridgeport Coffee to open in art center

Employees at the Bridgeport Coffee Company’s second Chicago cafe will begin training next week, in the lead up to the store’s Aug. 1 opening, according to manager Kim Hayward.

Most staff have already been chosen for the shop, located in Istria Cafe’s previous space at the Hyde Park Art Center, 5020 S. Cornell Ave. The store will be painted this week and receive equipment, according to Hayward, who estimates it will seat around forty – including 17 seats along the store’s east window.

“I’m excited because it’s part of all the revamping that’s going on in Hyde Park,” said Hayward, a neighborhood resident of about four decades.

Although unlike its predecessor the store will not sell gelato, it will include a prep kitchen, and Hayward is exploring the possibility of selling Medici baked goods there.

Hayward says she e-mailed her resume to owner Mike Pilkington after an article about the store was published in the Hyde Park Herald. Before, she was an assistant manager at the Medici on 57th restaurant, 1327 E. 57th St., where she worked for more than 20 years.

“This is simpler, which’ll be nice,” she said.
